
Is Gigi’s tipless?
Yes! It is true that our staff is not tipped. You won’t even see that line on our receipts. We have opted to have our menu pricing reflect the true cost of eating out, service and all. Every staff member at GiGi’s is integral to our success and all deserve to be compensated fairly. Servers help you with a smile to find the dish on the menu right for you and take care of you while at GiGi’s, while our kitchen staff prepare everything from scratch. All are important with their different skills so we went to a tipless model to ensure that all staff are compensated fairly. If you feel the need to leave cash at the table, it will be split evenly amongst all staff. They appreciate it, but it is not necessary. We just ask that you come back to visit us!
How does your staff make a living without tips?
We love our employees! We ensure that all full-time staff, both front of house and back, is paid a living wage, is covered by health, dental, and vision insurance, has a full week of paid vacation every year, and can become a part of our profit incentive plan! Even part-timers are earning their way to the benefits. Most benefits are based on hours worked for GiGi’s.

Our cafe is named for the first letters of the food cart where it all started: Gaufre Gourmet.
What is scrapple?
Our house Waffle Wizard, Mike, is also a Scrapple Sorcerer! Did we mention that there is magic at GiGi’s?? Mike’s great-grandfather moved to Seattle from Pennsylvania and developed the recipe that we still use here at GiGi’s today. This Pennsylvania treat is a secret family recipe made from ground pork combined with perfectly spiced polenta. It is formed into a loaf, then sliced and fried for a delicious breakfast meat dish.

Who makes your coffee?
Our coffee is blended specially for us and roasted fresh weekly by Groundworks Coffee. If you want to enjoy our coffee at home, we are happy to sell you a bag of beans!
What is a Liège waffle?
A Liège waffle is a dense, chewy Belgian waffle created for the prince of Liege in the 17th century. The dough is eggy and buttery, much like a cinnamon roll. We knead in big chunks of pearl sugar before pressing it in our hefty cast iron waffler. Some of the sugar caramelizes on the outside, and some stays crunchy on the inside. There’s no need for butter or syrup for this waffle, as it is sweet and buttery all on its own!
What is a Brussels waffle?
Brussels waffle is the light, thick waffle we know in America as a “Belgian Waffle.” In reality, there are many “Belgian Waffles,” all named for the city where they were created. Our Brussels waffle is crispy and delicious with butter and real maple syrup! Ours is made with our house gluten-free flour mix, but they are so yummy, you would never know that they’re gluten-free!
What is a lardon?
The fancy French name for the most delicious form of bacon ever! We cut thick chunks of slab bacon and then bake them in a sweet / spicy maple glaze. You end up with chunks of bacon candy on a waffle. What could be better? Yum!
